PCPPI recognizes exceptional employees at Gold Crown Awards

(PCPPI)—the exclusive manufacturer of PepsiCo beverages in the country—recently honored three outstanding employees with this year’s Gold Crown Awards. This recognition is awarded to employees for demonstrating professional dedication in line with PCPPI’s ICARE Values, which stands for Integrity and Innovation, Care and Respect, Empowerment and Excellence.

The three awardees for this year are (in photo, from left to right) Faith Marie M. Zacal of from PCPPI’s Cagayan De Oro plant, Lucky J. Mallari from the Central Luzon Operations (CLO) and Jona Marie S. Rollan from the Davao manufacturing facility.

LIME DOUGHNUTS

Donuts are never a miss if you have a sweet toot. Make your own handcrafted donuts at home by following this recipe.

975 g  Flour, All Purpose

1.5 g  Groceries, Yeast

20 g  Sea Salt

100 g  Refined, sugar

8 pcs  Eggs, raw

220 ml  Water

130 ml  Dairy, Full Cream Milk

900 g  Dairy, Unsalted Butter

60 ml  Groceries, Buttermilk

20 ml  Juice, Lime

1.5 g  Salt, Kosher

300 ml  Vegetable Oil

400 g  Lime

Doughnut Procedure: In a medium bowl, whisk together the eggs, water, and milk. Whisk in the butter. Pour the wet ingredients into the dry ingredients and stir with a rubber spatula until the liquid is absorbed and there are no lumps. The mixture will resemble muffin batter. It may look a little lumpy and slightly greasy but be assured that all of the butter will be absorbed by the time the dough rises. Cover the bowl with plastic wrap and let it rest at room temperature for 4 to 6 hours.

Uncover the bowl and use a rubber spatula to gently loosen the dough from the bowl. Dampen your hands with cool water and slide one hand under one side of the dough. Fold that side of the dough into the center and press it down gently so it adheres to itself. Give the bowl a quarter turn and repeat the folding process two more times. After the fourth fold, flip the dough over so the seams are on the bottom. Cover the bowl with plastic wrap and let it rest at room temperature for 8 to 12 hours, or overnight.

Uncover the bowl and repeat the folding procedure in the previous step. Put the dough onto a plastic wrap–lined baking sheet. Cover the dough with plastic wrap and pat the dough into a flattened dome. Refrigerate the dough until it is firm, at least 2 hours and up to 2 days.

Line 3 baking sheets with parchment paper and lightly dust them with flour. Remove the dough from the refrigerator and dust a countertop lightly but evenly with flour. Turn the dough out onto the floured countertop and dust it with flour. Use a rolling pin to roll the dough out to a 3⁄8-inch (9 mm) thickness. Use additional flour if it begins to stick. Use a 3-inch (8 cm) doughnut cutter to cut out the doughnuts and put them onto the parchment-lined pans. Separate the holes from the doughnuts so they may be fried separately. Cover the pans loosely with plastic wrap and let the doughnuts proof for 1 hour. Gently ball up the trimmings from the doughnuts, put them in a bowl, cover with plastic wrap, and refrigerate until they firm up, at least 1 hour or up to 24. These trimmings may be rerolled to make additional doughnuts.

Pour 2 inches (5 cm) of oil into a large pot and heat it over medium-high heat until it reaches 350F (177C). Set a wire rack over a baking sheet. Put 4 to 5 doughnuts at a time in the oil and cook for 1 minute. Use a slotted spoon or spider to flip the doughnuts over and cook them for 1 minute on the other side. Flip one more time and cook for 1 minute more. The doughnuts should be golden brown. Use the slotted spoon to transfer the doughnuts from the oil to the rack to cool. Repeat to cook the remaining doughnuts. To cook the holes, put 12 into the oil at a time and cook for 45 seconds. Use the slotted spoon to turn the holes over and cook for 45 more seconds. Some of the holes may not flip, so use the slotted spoon to stir them in the oil so they cook evenly. Transfer the holes to the wire rack.

Lime Glaze Procedure: Put the confectioners’ sugar in a bowl and pour in the buttermilk, lime juice, and salt. Use a whisk to stir the mixture together until it forms a smooth glaze. Reserve at room temperature and whisk until smooth before using.

Dip one side of each doughnut into the glaze, then flip glaze side up and return to the cooling rack.

Grate the zest of 3 of the limes over the glazed doughnuts.

Once all the doughnuts are glazed, put the doughnut holes into the bowl with the glaze and grate the zest from the remaining lime into the bowl.

Use a spoon to mix the holes in the glaze and evenly coat them.

Transfer the holes to the wire rack and let the glaze harden. Serve once the glaze is firm to the touch, if you can wait that long.

AIR FRIED INASAL CHICKEN WINGS

Get your fill of chicken wings with this easy air fryer recipe. Chicken inasal is one of the most famous dishes to be seen in a wide table of Filipino cuisine.

3 pcs  Ginger, thumb

3 pcs  Lemongrass

500 g  Poultry, Chicken WIngs

2 tbsp  Fish sauce

2 tbsp  Garlic powder

2 tbsp  Onion powder

3 tbsp  Atsuete oil

1 tbsp  Black Pepper Crushed

10 pcs  Calamansi (juiced)

4 pcs  Lemon wedge

Using the Breville Juicer, juice the ginger and lemongrass to make a concentrated extract of ginger and lemongrass.

Combine the extract in a Ziplock with the chicken wings, fish sauce, soy sauce, calamansi, garlic powder, onion powder, astute oil and ground pepper.

Shake up the contents of the ziplock to combine thoroughly.

Allow to marinate for at least 3 hours. Marinate overnight for best results.

Empty the contents of the ziplock onto the black tray provided with your Breville Smart Oven Air Fryer.

Air Fry the chicken wings for 12 mins 360 Deg F.

Serve with lemon wedges.

PCPPI reinforces food safety system and culture across all plants

Pepsi-Cola Products Philippines Inc. (PCPPI)—the exclusive manufacturer of PepsiCo beverages in the country—is bolstering the company’s food safety culture. It benefits its people and the customers in the long term, following the launch of its food safety education campaign.

PCPPI plants implemented the Talas ng Kaalaman on Food Safety program. It is to strengthen the knowledge of its employees on the standard food safety procedures. The goal is to improve its operations responsibly and sustainably.



“PCPPI is committed to meeting the highest food safety and quality standards. This is the reason we continuously implement programs and workshops that would improve the skills of our people. We ensure that they too become ambassadors of our food safety culture,” said Frederick D. Ong, PCPPI President and CEO.

The information campaign was executed through Facebook, bulletin board posts, and email blasts. It provided comprehensive information about food safety culture. It informed how to fight food fraud, product protection, good manufacturing practices, and allergen management. It also highlighted some of the cleaning practices. These include the pest control process, proper waste disposal, and locker sanitation and maintenance.

Throughout the program, PCPPI conducted random ambush interviews with employees. This is to measure their grasp of the food safety system. It recognized the departments with the cleanest space and well-informed personnel on the importance of food safety.

Aside from this, PCPPI completed the Food Safety System Certification (FSSC) for its Metro Operations Services, Pampanga, Rosario, STRO, Davao, and Bacolod plant. The FSSC is a globally accepted standard. It recognizes companies’ processes that are at par with global standards— from employee selection to production and warehousing. Its goal is to evaluate the systems in place to ensure food safety.

PCPPI also assures that their products are safe for consumption as all PCPPI plants have the Food and Drug Administration (FDA) License to Operate. All PCPPI products also have its valid certificate of product registration.

The company also recently completed other third-party food safety and social welfare audits. Some of which are the McDonald's Safe Water System (SWS) and Supplier Quality Management System (SQMS) for the PCPPI San Fernando plant.

CERVEZA NEGRA CHOCOLATE BALLS
Ingredients & Preparation HH Measurement Measure
1 (550 g) pack MAGNOLIA DEVIL’S FOOD CAKE MIX
3 (50 g each) pc MAGNOLIA BROWN EGGS
1 (330 mL) bottle CERVEZA NEGRA
1 (120 mL) cup coconut oil
COATING & DÉCOR
1/2 kg dark chocolate, chopped
100 grams pistachio nuts, chopped
1 (120 g) cup cocoa powder
1 (80 g) cup desiccated coconut
100 grams white chocolate, melted (optional)

Procedure:
1. Preheat oven to 176.7°C (350 F). Meanwhile, line and grease one (1) 12x16 inch square pan with baking/wax paper. Set aside.
2. In a bowl, combine cake mix, eggs, cerveza negra and oil. Mix until smooth in consistency.
Pour into prepared pan.
3. Bake for 25 minutes. Let cool and then crumble cake and form into 1-inch balls.
4. Prepare dark chocolate by melting it for 10-15 seconds in a microwave oven over high setting.
5. Dip each ball in melted dark chocolate and then roll each ball in pistachio nuts, cocoa
powder or desiccated coconut. Drizzle with some melted white chocolate placed in a piping bag, if desired.
Makes 40 pieces.

Christmas Feast Ideas That You'll Love

There are two traditional feasts that Filipino families often look forward to during Christmastime: the Christmas Eve Noche Buena and the one that follows on the 25th itself, which is often held as part of a festive family reunion. Either way, expect those in charge of preparing the dishes to pull out all the stops to serve the most delectable food on the table for everyone to enjoy. 

And if that happens to be you, chances are high that you already have some recipes in mind to make each of these feasts a gastronomic delight to remember. They might even be all-time family favorites, or even hand-me-downs from your great-great grandparents. Having said that, it certainly wouldn’t hurt to learn a few more recipes just to keep things fresh and put something different on the table for Christmas. Two that are guaranteed to make you look like Master Chef are Meatballs in Black Truffle Sauce and Three-Cheese Truffle Macaroni and Cheese.


The recipes are as follows:



Meatballs in Black Truffle Sauce

Ingredients

• 2 slices white bread crusts removed, broken into pieces

• scant 2/3 cup whole milk

• 2 1/4 cups finely minced ground beef (or a mixture of meats, such as pork, chicken or turkey)

• 1/2 cup meat pâté

• Salt and freshly ground black pepper

• Plain all-purpose flour, for dusting

• Olive oil for frying

FOR THE BLACK TRUFFLE SAUCE

• 1 tablespoon + 2 tsp butter

• A drizzle of olive oil

• 1 bunch spring onions scallions, finely chopped

• 1 carrot finely chopped

• 1 heaped cup button or oyster mushrooms finely chopped

• 3 1/2 tablespoon plain all-purpose flour

• 1/4 cup white wine

• 2 cups beef chicken or vegetable stock

• 1 teaspoon salt

• 1 teaspoon finely chopped rosemary

• 1/2 cup double heavy cream

• 1/2 teaspoon Umbria Black Truffle Sauce

Instructions

1. Place the bread in a bowl and pour over the milk. Set aside to soak.

2. In a separate bowl, mix together the meat and the pâté. Add the soaked bread and season with salt and freshly ground black pepper. Mix until smooth and well combined. Form meatballs by rolling walnut-sized pieces of the mixture between your hands. They should be about 1oz each. Dust the meatballs in flour.

3. Heat some oil in a shallow pan over a medium-high heat and fry the meatballs just until they are golden. Do not overcook at this stage as we are going to finish them in the sauce. Set aside.

4. To make the sauce, heat the butter and olive oil in a pan over a medium-low heat and add the finely chopped spring onions, carrot and mushrooms. Cook for about 10 minutes, until the onion is transparent. Reduce the temperature to low and add the flour to the pan, stirring with a wooden spoon to make a roux. Cook for about 4 minutes and then add the wine, continuing to stir until you get a paste and the alcohol has evaporated, then add the stock with the salt and rosemary. Keep stirring and cooking until the sauce thickens, then add the cream, stirring so that the mixture doesn’t split or curdle. Add the meatballs to the sauce and cook for a further 5 minutes.

5. Put Umbria Black Truffle Sauce into the sauce, mix and fold and serve hot.


Three-Cheese Truffle Macaroni and Cheese



Ingredients:

1 tablespoon butter, divided

1 cup mushroom (75 g), sliced

1 pinch salt

1 pinch pepper

2 tablespoons flour

1 cup milk (240 mL)

1 cup shredded parmesan cheese (110 g)

1 cup shredded cheddar cheese (100 g)

2 cups shell pasta (400 g), cooked


TOPPINGS

½ teaspoon Umbria truffle oil

1 tablespoon fresh chives, chopped


Preparation

1. Melt 1 tablespoon of butter in a medium pot over medium heat. Add the mushrooms, salt, and pepper and cook until the mushrooms are softened. Remove from the pot.

2. Add the remaining 2 tablespoons of butter and the flour to the pot. Whisk until the flour is toasted, approximately 2 minutes.

3. Add the milk while whisking continuously to avoid lumps. Cook until the sauce is thickened.

4. Whisk in the Parmesan and cheddar cheeses and season with salt and pepper.

5. Add the cooked pasta and mushrooms. Mix until the sauce coats the pasta well.

6. Top with Umbria truffle oil, fold and add chives.


Of course, it’s understandable that you’d stop at nothing to make these year’s Christmas celebrations as grand as possible. After all, last year’s Holidays were mostly muted due to the pandemic. Now, the scourge that is COVID-19 is still here, but the country is showing signs of recovery and the quarantine restrictions are easing as a result. 


However, that doesn’t mean you and your family should be letting your guard down. Christmas is just around the corner. What makes this season very exciting is the food that we can eat during this season. One of the many foods that we're craving for is the Puto Bumbong. It is made of glutinous rice flour plus grated coconut and sesame seeds.
I made amy own version which is kind of different from the usual steam. I made it into a Turon without coconut and sesame. Please see the cooking instruction on the video I made.

Ingredients:
3 cups glutinous rice flour
1/2 tbsp. ube essense or food coloring
3 tbsp sugar
40-60ml water
cheese
grated coconut (optional)
sesame seeds (optional)
condensed milk

On its 5th season, the San Miguel Pure Foods Home Foodie Chefs Yen, Martin and John together with real-life couple Drew Arellano and lya Villana, continue to teach and entertain Home Foodies with resto-inspired and classics with twists but with new and level up ideas, easy-to-prepare as well as budget-friendly recipes.

Among the new elements for this season is that Home Foodie went out of the kitchen for fresh ambiance. Some of the cooking demos are done on location with a refreshing view of the Sierra Madre Mountain Ranges as the kitchen backdrop.

Easy to Cook Chicken Curry

For me, the real test of being a mother is to prepare and cook meals for the family. What more if you are a stay at home mom? You will do all the household chores, even if you don't know anything, you will learn eventually.

Cooking seems to be a great hobby and skills that everyone should learn. Thanks to bloggers and vloggers out there who shares their passion for cooking. A lot of recipes you want to learn is just a click away. Just search, read then watch some of their videos. And so I did.
A few weeks ago, I tried cooking the Chicken Curry.
Been fed up of crispy fried chicken, tinola, adobo, and asado - common Filipino dishes.
My kids should know that chicken has other taste aside from their usual fried chicken.
I make sure to make them taste my new recipe. I am so happy that they told me, masarap (delicious). They ate what I served them at that time.

The ingredients were not complete but it turned out fine. I did not have laurel leaves and bell pepper but still delicious.

So I will share with you my version of Chicken Curry.



Here are the Ingredients:

1/2 kilo of chicken
2-3 tablespoon curry powder
1 sachet coconut milk powder or in can
black pepper
salt/ other seasonings (magic sarap)
1 large carrot
1 large potato
1 bell pepper (optional)

1. Peel and cut the carrot and potato. Fry them and set aside.
2. Cut the chicken into a bite-size, wash, seasoned with magic sarap or other seasoning and then fry.
3. Sautee garlic and onion. Add the chicken, stir and let absorb the taste of garlic and onion.
4. Add curry powder, pepper, bell pepper. Add a little water and let it simmer for 10 minutes.
5. Finally add the potato, carrot, and coconut milk powder (dissolve in a half cup of water) or coconut milk in a can. Add some more seasoning according to your taste. Continue to simmer until the sauce thickens. Transfer to a serving bowl and serve.

This mildly spicy Asian-inspired dish is a great way to spruce up a boring meal. Try it at home. Super easy and yummy.

Homemade Birthday Cake: No Bake Oreo Cheesecake

If you ask me what's one of my many favorite desserts, definitely I will tell you first it is cheesecake. Whatever flavor of cheesecake, I will eat it. The first time I did my own recipe was when I turned 29 this year. Last March was my birth month and I decided to make my own cake. Not baked because we didn't have an oven, it was a no-bake cheesecake. I just searched online and watched youtube videos for ingredients and how to do the no-bake cheesecake. Just be mindful of the ingredients to be used, there are expensive and affordable which they still have the same taste. So if you want to lessen the expenses, go for much cheaper but still have the same result after all. 

I didn't have a mixer on the first time, so it wasn't thickened the creams. But I have the cake mold that we bought at Lazada when they have a sale. In my second time, I didn't have a mold but I have the mixer that my husband brought from Dubai. I used the Pyrex bowl for my cake turned into ice cream oreo cheesecake when it was frozen.

Actually, my husband requested the cake. He's been excited to use the mixer he bought for me. I want to learn more about baking and mixer is one of the many kitchen tools that I need the most. He bought the mixer in an online shopping site based in UAE - awok.com. It only cost 1AED! WOW, right? 

For my first time, here are the ingredients I used:
☑️Oreo Biscuits 
☑️Buttercup
☑️Magnolia Cream Cheese
☑️Alaska Condensada 
☑️Anchor Whipping Cream
☑️Sugar
☑️Mr. Gulaman Jelly Powder (white, no flavor)
☑️Vanilla
☑️sprinkles 
☑️Milky Marie Biscuits




For the second time, here are the Ingredients I used:

☑️Emborg Cream Cheese
☑️Buttercup 
☑️Nestle Cream (Thickens)
☑️Alaska Cremdensada (thick cream)
☑️ Don frank Gulaman powder (white)
☑️vanilla
☑️sugar
☑️Oreo biscuits
☑️Grahams



Here's my own version of No Bake Oreo Cheesecake:


1. Melt the butter in a pan or in a microwave oven. Mix it with crushed biscuits like Marie or Graham then add some sugar. Pressed into cake pan or any bowl like Pyrex. I used the bottom of a glass to press the crumbs. Set aside and chill in the refrigerator.

2. Beat cream cheese. It's up to you if you want more 2-3 packs of cream cheese. Add some sugar and vanilla. Set aside.

3. Nestle cream is much cheaper than Anchor whipping cream, just beat it to make it thick. But you can buy one thick cream, already available in the supermarket. 

4. Mix the thick cream and cream cheese. Beat together then add some oreo. Optional.

5. Boil the jelly and add to the mixture. Use water or milk to boil. Mix well.

6. Ready to put the mixture to the chilled crumbs then top some oreo for decoration. My kids asked for sprinkles to decor my first ever cheesecake. It turned out so sweet. So I suggest reducing the amount of sugar or condensed milk if you will add sprinkles.
Chill 7-8 hours.

Enjoy your dessert.

It was my birthday, so I feel so good making my cake. I have to feel good about everything. I may not be born with a silver spoon but God gave us the gift of life; it is up to us to give ourselves the gift of living well. Do what makes you happy.

Celebrate Special Occassions At The Vikings

This is a very late post. I should have shared it last November 2017. Already forgot the exact date. So I want to share my experience of dining in the Vikings. Also, an update that we dine again July 7, 2018.

Vikings, the largest buffet restaurant here in the Philippines. I know everyone who heard about it, wish to experience to taste all the delicious food they served with class and style. I am no exception. I was thrilled and so excited when I learned that there's this buffet who can serve you a lot of cuisines from different countries. Not all countries, but you can have a chance to at least taste some.

Last November 2017, my in-laws, my kids and I went to Pampanga for a relative visit and before we headed home, we dropped by at the SM To dine in. My brother in law who paid for the treat decided to eat at the Vikings. We arrived there at past 1:00 already. The line was already long for those without reservations. While waiting for our turn, the kids entered kids play place for 30 minutes. And still waited for about an hour to enter the luxurious buffet. It was so generous that they gave ice tea drinks to all waiting. While waiting, I observed that most of them who certainly dine there were celebrating birthdays most probably.

Since it was Halloween month, they provided a Halloween theme photo corner on the side so that you can share on social media and I think they also have a contest on Facebook at that time. 

When we entered the premises, the ambiance is really cozy and amazingly beautiful. The seats were elegant and comfortable in purple color. You will feel very social, rich and a very important person.

Every Vikings' branch featured a theme and will leave you standing with an overwhelming feeling. The architecture is so, so great. It seems to cost a lot of money and I fear to make a mistake. I don't have money to pay for any damages, I was just treated by my inlaws. Lol!

The personnel will guide you to your respective seats. Then, you are free as a bird to try and taste everything they serve. This is it! I told myself that I will taste all of the food. I thought I have the power to do that. No, I can't. Some food serves a lot that you will already feel full. 

You have a lot of options. First, you can try the plain rice, fried rice or the flavored rice then go to different selections of viands.

Mamita's food - she loved the pork sinigang. The fresh tamarind was added to make a great taste.

I haven't tried these big cheese here. Next time, you're going to be my first destination. Hahaha

When it comes to dessert, I first look for cheesecake. I got two flavors of it. Whew! It always satisfies my cravings.

Promise, these ice creams were the best. They were so creamy and so tasty.



Cupcakes designing made my kids enjoy the experience. They did not eat much rice and viands. They actually just got some fishball. hahaha 
That's what why I don't like to bring kids to the buffet, it's a waste of money if they will not eat as much as the adult does.


So yeah kids only tasted cupcakes, siomai, ice cream, and some cakes.
What I love the most was that I made my own healthy, mouth-watering salad recipe.

I asked for fresh squid to be grilled and there are so many kinds of seafood.
If you are a pizza lover, there are so many options for you to taste crunchy, savor such as Italian pizza.
The variations of dessert will make you wanna come back.
Make your own soup with fresh ingredients called shabu-shabu.


So for the update, we dined again July 7, 2018, for lunch. My Queen requested to go out. She wants to see what's inside Jumbo Jenra in Pampanga. When we got there, it was just a supermarket, with some stalls inside like Dunkin donut, western union, clothes, a small play place for kids and some things to sell. So we can't roam around and spent a lot of time there. We decided to go to SM Pampanga and eat there. The kids went on their own then headed first and insist to eat at the Vikings.

It's very seldom that we can go out. We have a lot of expenses now that our kids were both studying. It was a blessing that we can experience this luxury buffet.

Vikings were always blockbuster. It was flooded with people eager, hungry and avid fan of buffets.

Thanks to my loving and supportive mother-in-law for always treating us. One day, it'll be my turn.


Meet my kids, they only ate one to two viands. The Queen just got fried rice and shrimp. The Princess also had the fried rice, dumpling and she loved the Japanese tonkatsu because of its crunchy breaded pork. But actually, the first one she took was marshmallows with a strawberry dip in the fountain.

I asked wanton mami for Queen but they did not taste it. So I was the one who ate it. So far, so good. I love the taste compared to chowking. The toasted garlic makes it more delish.

If you love fresh fruits, you have a lot of choices. It was just yesterday my first time to eat honeydew. So it was a good first. You will get a lot of firsts here in Vikings.
You may not be in a certain country but at least occasionally, you can taste the Japanese, Korean, Chinese, Italian and more food that you can imagine. But of course, Filipino food is always present.
